Choco Noir Pulled Pork Prep Time: 15 Minutes Cook Time: 3 Hours 30 Minutes Ready Time: 3 Hours 45 Minutes Ingredients Boneless Prok Shoulder or Pork Leg - 3 lbs Canola Oil - 2 tblsp Chopped Shallots - ½ cup Chopped Garlic - 2 tblsp Canned Diced Tomato - ¼ cup Apple Cider Vinaiger - 1/3 cup Water -  1 cup Chili Powder - ¼ cup Molasses - ¼ cup Cumin powder - 2 tsp Chopped Oregano - 2 tsp Chopped Thyme - 2 tsp Chopped Dark Chocolate  - ¼ cup Salt/Pepper to taste Directions 1. Heat a Roasting pan over the stove or in a Dutch oven. Pour the oil till the oil is smoking. 2. Season the Pork Shoulder with chili powder and cumin. 3. Sear the Pork in the roasting pan, browning each side. 4. Add the Shallots and garlic and sauté for a minute, and add the tomato, vinegar, molasses, water, oregano and thyme. 5. Bring it to a boil. 6. Stir in the Chopped Dark Chocolate till melted. 7. Cover and braise in a 300 F oven until tender (approx 3 hours). 8. Once tender, transfer pork to a large bowl and let it sit for 15 mins. 9. With a fork shred or pull the pork, discarding any skin and fat. 10. Skim the fat from the sauce and transfer the pork back into the pan and heat. Serve HOT Serves 6
