Risking Their Lives in the Fury of the Ocean I spent last weekend in a small fishing community in Newfoundland.  Rencontre East, with it’s population of 140 is a community has taught me much, not the least of which is a new outlook on life and most importantly, how to live it. One of the most important things that I learned during the time spent with my new friends from the east, as the inherent goodness and simplicity of food, and the life lived by those that deliver that food to us. When we go to a restaurant and order a fillet of Cod or Salmon, we pay little mind to the hard work, high risk environment endured by those fisherman so committed to bringing us the ocean’s culinary treasures.   FIghting through the fury of the Ocean, waking at three in the morning to hit the waters, to put that wonderful fresh fish on our plates. This is my tribute to those good, hard working people with a special shout out to my new fisherman friends, Tom, Brian and Steve from Rencontre East (Newfoundland) Rencontre East Bouillabaisse Prep Time: 10 Minutes Cook Time: 25 Minutes Ready Time: 35 Minutes Ingredients 1/2 lb cod fish fillet 1/2 lb scallops 1/2 lb prawns 1/2 lb baby clams 1/2 lb mussels 1 lobster 4 oz salmon 1/2 cup onion, chopped 1/2 cup celery, sliced 2 garlic clove, chopped 1/4 cup butter 1 cup clam juice 1/2 cup water 2 (7 ounce) cans tomatoes, chopped 1/2 teaspoon savoury 1 large bay leaves 1 teaspoon Cajun Seasoning 3/4 teaspoon black pepper Salt to taste 1 teaspoon lemon juice 1 tablespoon chopped cilantro Directions 1. Sauté garlic, onions and celery in the butter, in a large saucepan, till the onions turn translucent (approx 4 mins) 2. Add in the dry spices and sauté for  2 more minutes 3. Cut up the fillets of fish in 1 1/2" chunks, and add it to the saucepan and continue sautéing for 2 more minutes. 4. Add in the tomatoes, water and the clam nectar and cook for 5 more minutes. 5. Add the rest of the seafood and cook for 5- 8 minutes. 6. Adjust the seasoning, and add the lemon juice 7. Garnish with chopped cilantro Enjoy with a fresh home-made loaf of bread.
