EASY BEEF & CILANTRO SOUP Prep Time:  15 Minutes Cook Time:  30 Minutes Ready Time: 45 Minutes Ingredients 1   tsp vegetable oil 1   cup boneless beef chuck roast, cut in medium dice ¼  chopped red onion 1   chopped garlic cloves ½  cup chopped red pepper ½  cup chopped green pepper ¼  cup chopped yellow pepper ¼  cup sliced mushroom 1   tsp cumin powder 1   tsp chilli powder ½  cup cilantro leaves 1   cups spinach 1   carton Beef Broth Salt and pepper to taste Directions 1. Heat the oil in a saucepan over high heat 2. When very hot, sear the beef pieces until they are golden brown 3. Put the cilantro and spinach in the blender and process with one cup broth and reserve 4. Add the onions, peppers and garlic to the saucepan; stir and let them cook until the onions are soft and translucent 5. Add the Chilli, cumin and continue to sauté for one more minute 6. Add the remaining broth and simmer for 15 minutes. 7. Pour the cilantro mix and turn the heat to medium heat 8. Cook for another 15 minutes 9. Serve Hot
