Maple Glazed Roasted Sweet Potato Soup Prep Time: 20 Minutes Cook Time: 35 Minutes Ready Time: 55 Minutes Ingredients Margarine - 2 tblsp White Onion chopped - 10oz Celery ½ " dice - 5oz Leeks sliced - 7oz Chopped Garlic - ½ tsp Sweet Potato (Peeled) ½ " dice - 1 ½ lbs Chicken Stock - 4 cups Cinnamon Stick - 1 ea Ground Nutmeg - ¼ tsp 18% Cream - 1 ½ cup Maple Syrup - 4 tbsp Garlic Powder - 1 tsp Ginger julienne - 1 tsp Directions 1. Marinate the Potatoes with 2tbsp of Maple Syrup and garlic powder and roast in the oven, till cooked. 2. Melt margarine in a heavy large pot over medium heat. 3. Add onions and sauté approx 5 mins 4. Add celery, leeks and sauté approx 5 mins - till translucent 5. Add garlic, ginger cinnamon and nutmeg and sauté approx 2 mins. 6. Add the Roasted Potatoes, chicken stock and bring to a boil. 7. Reduce Heat and simmer uncovered for approx 15 mins. 8. Remove Cinnamon stick and puree the soup. 9. Bring it back to the stove, add the Cream and the rest of the maple syrup. 10. Check for seasoning and heat upto 165 F for service.
