Seared Venison Loin with a Chipotle Dark Chocolate Jus Details: Prep Time: 15 Minutes Cook Time:  20 Minutes Ready Time:  180 Minutes SERVINGS: 4 servings Ingredients Venison Loin - 2 lb Olive Oil - 1 tsp Marinade: Red Wine (Dry) - ½  cup Grainy Mustard - 2 tblsp Raspberry Dressing - ¼ cup Chopped Garlic - 1 tblsp Chopped Shallots - 2 tblsp Quebec Maple Syrup - 1tblsp Chopped thyme - 1 tsp Chopped rosemary - 1 tsp Chili powder - 1 tsp Sauce: Dark Chocolate Chips - ½ cup Chipotle Chili - 1 tblsp Demi Glace - ¾ cup Chopped Shallots - 2 tblsp Chopped garlic - 1 tsp Butter - 1 tsp Directions:   1. In a mixing bowl, mix together all the ingredients for the marinade. 2. Clean the venison loin and marinade the loin in the prepared marinade for a minimum of 2 hours. Ideally, marinade the meat overnight. 3. For the Sauce: In a Saucepan, melt the butter and add in the shallots and garlic and sauté till golden brown. 4. Add in the chipotle chili and continue to sauté for another minute. 5. Add in the Demi glace and cook for two more minutes, and then whisk in the chocolate chips, turning off the heat. 6. In a pan, heat the olive oil, till almost smoky. 7. Add the Venison loin and sear for a minute on both sides. Cook to desired doneness. 8. Serve Hot, sliced on a bias, and pour the sauce on top.
